Ingredients:
- 2 cups gluten-free all-purpose flour ( GluFD Flour )
- 1 teaspoon xanthan gum (if your gluten-free flour blend doesn't contain it)
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup plain Greek yogurt (or dairy-free alternative)
- 1/4 cup olive oil
For the za'atar topping:
- 2 tablespoons za'atar spice blend
- 2 tablespoons olive oil
Instructions:

Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

In a large bowl, whisk together the gluten-free all-purpose flour, xanthan gum (if needed), baking powder, and salt.

Add the Greek yogurt and olive oil to the dry ingredients. Mix until a dough forms. If the dough is too sticky, you can add a bit more flour.

Divide the dough into two equal portions.

On a surface dusted with gluten-free flour, roll each portion of dough into a thin rectangle, about 1/8 to 1/4 inch thick.

In a small bowl, mix together the za'atar spice blend and olive oil.

Brush the za'atar mixture evenly over the rolled-out dough.

Using a pizza cutter or a sharp knife, cut the dough into sticks, about 1 inch wide.

Carefully transfer the sticks to the prepared baking sheet, leaving some space between each.

Bake in the preheated oven for 12-15 minutes or until the sticks are golden brown and crisp.

Allow the za'atar sticks to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
