Gluten Free Zaatar Sticks

Ingredients:

  • 2 cups gluten-free all-purpose flour ( GluFD Flour )
  • 1 teaspoon xanthan gum (if your gluten-free flour blend doesn't contain it)
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup plain Greek yogurt (or dairy-free alternative)
  • 1/4 cup olive oil

For the za'atar topping:

  • 2 tablespoons za'atar spice blend
  • 2 tablespoons olive oil

Instructions:

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

  2. In a large bowl, whisk together the gluten-free all-purpose flour, xanthan gum (if needed), baking powder, and salt.

  3. Add the Greek yogurt and olive oil to the dry ingredients. Mix until a dough forms. If the dough is too sticky, you can add a bit more flour.

  4. Divide the dough into two equal portions.

  5. On a surface dusted with gluten-free flour, roll each portion of dough into a thin rectangle, about 1/8 to 1/4 inch thick.

  6. In a small bowl, mix together the za'atar spice blend and olive oil.

  7. Brush the za'atar mixture evenly over the rolled-out dough.

  8. Using a pizza cutter or a sharp knife, cut the dough into sticks, about 1 inch wide.

  9. Carefully transfer the sticks to the prepared baking sheet, leaving some space between each.

  10. Bake in the preheated oven for 12-15 minutes or until the sticks are golden brown and crisp.

  11. Allow the za'atar sticks to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

  12. Serve and enjoy your gluten-free za'atar sticks as a delicious snack or appetizer.
