Ingredients:
- 1 1/2 cups all-purpose flour ( GluFD Flour )
- 1 tablespoon sugar
- 2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/4 teaspoon black paper
- 1 cup shredded cheddar and mozzarella cheese (or any cheese of your choice)
- 1/4 cup unsalted butter, melted
- 1/2 cup milk
- 1/2 yogurt
- 1/4 oil
- 1 large eggs
- 1/2 cup black olives, chopped
- 1/4 cup green olives, chopped
Instructions:
- Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or grease the muffin cups.
- In a large mixing bowl, whisk together the flour, baking powder, sugar and salt.
- In a separate bowl, beat the eggs and then add milk , yogurt, oil. Mix well.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps are okay.
- Gently fold in the shredded cheese and chopped olives. Season with freshly ground black pepper to taste.
- Spoon the batter into the prepared muffin cups, filling each about 2/3 full.
- Bake in the preheated oven for about 20-25 minutes or until a toothpick inserted into the center of a muffin comes out clean.
- Allow the muffins to cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
- Serve the muffins warm or at room temperature. They are great as a snack, appetizer, or as a side dish with soups or salads.
