Gluten Free Muffins with Mix Cheese and Olives

Ingredients:

  • 1 1/2 cups all-purpose flour ( GluFD Flour )
  • 1 tablespoon sugar
  • 2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 teaspoon black paper 
  • 1 cup shredded cheddar and mozzarella  cheese (or any cheese of your choice)
  • 1/4 cup unsalted butter, melted
  •  1/2 cup milk
  • 1/2 yogurt
  • 1/4 oil 
  • 1 large eggs
  • 1/2 cup black olives, chopped
  • 1/4 cup green olives, chopped

Instructions:

  • Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or grease the muffin cups.
  • In a large mixing bowl, whisk together the flour, baking powder, sugar and salt.
  • In a separate bowl, beat the eggs and then add milk , yogurt, oil. Mix well.
  • Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps are okay.
  • Gently fold in the shredded cheese and chopped olives. Season with freshly ground black pepper to taste.
  • Spoon the batter into the prepared muffin cups, filling each about 2/3 full.
  • Bake in the preheated oven for about 20-25 minutes or until a toothpick inserted into the center of a muffin comes out clean.
  • Allow the muffins to cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
  • Serve the muffins warm or at room temperature. They are great as a snack, appetizer, or as a side dish with soups or salads.
